Description

This white ceramic tea set consists of a brewing cup with lid and a serving cup. It is used by professional tea tasters and during tea competitions since the ceramic does not add any flavor to the tea. It is ideal when sampling new teas and is also very nice for everyday use.

The tea is brewed in the covered brewing cup and then poured out into the serving cup. The serving cup is used to pour the tea into individual tea cups.

A ceramic spoon (not included) is often used with this type of set. It is dipped in the brewing tea to collect the aroma - such an important part of the tea tasting experience.

Brewing Instructions

This tea tasting set consists of the brewing vessel and the serving vessel. Use enough tea leaves to cover the bottom of the brewing vessel, then add water just below the boiling point - about 85 - 95 degrees Celsius or 185 - 205 degrees Fahrenheit.

If desired, the first infusion can be used to rinse the tea leaves and allow them to "awaken". Fill the brewing vessel about half-way and after about 10 seconds pour it into the serving vessel and discard it. Then fill the brewing vessel again for the first drinking infusion.

The first steep is quite short - 30 to 50 seconds depending on the type and quality of the oolong. Making oolong tea is a delicate art and finding the appropriate balance between volume, temperature, and steeping time requires knowledge of the tea leaves. If the first steep is too strong or too weak, you can adjust the brewing time for subsequent steeps.

After transferring the oolong tea into the serving vessel, the brewing vessel can be immediately re-filled with hot water for the next brew. Each brewing time can be slightly longer than the previous.

Tea can be drunk directly from the serving vessel, or transferred into small tea cups using a ceramic spoon.

With a good quality tea, you can expect to get 5 to 8 brews before the tea starts to lose its flavor.
