Xi Ding Oolong Tea is from Taiwan's Alishan tea district, grown at an altitude of 1250 meters. Located along the Alishan Highway, Xi Ding is a popular place to watch the sunrise.

Xi Ding is an area famous for its fertile soil, supporting vegetable farming as well as tea plantations. The year-round misty conditions make it ideal for producing top-quality oolong tea.

Xi Ding oolong tea is a hand-picked and hand-processed. It is classed as a high-mountain tea (Gao Shan) - meaning it is grown above 1,000 meters.

Xi Ding oolong tea produces a sweet liquor with a slight astringency that mellows in subsequent brews. This is an oolong with plenty of flavor and aroma, suitable for multiple infusions.

Brewing Notes

Here are some guidelines for brewing Xi Ding oolong tea. These are meant as a starting point only. Please adjust to suit your individual preferences.

  • Brewing vessel: 150cc (5 US fluid ounces)
  • 6 grams of tea leaves
  • Water temperature: 85 - 90 C (185 - 190 F)
  • Infusion durations: 30 seconds, 1 minute, 1 minute 30 seconds, 2 minutes, and 3.5 minutes

The taste of the brewed tea is affected by the water quality, water temperature, amount of tea leaves, type of brewing vessel and the duration of each infusion.
