This is a Jin-Xuan milk oolong tea from Tai-Xing in the Alishan tea district.

The Tai-Xing tea area is located in Meishan Township, Chiayi County. It is one of the top tea areas of Alishan, producing both Qingxin (green heart) and Jin-Xuan (milk oolong) tea.

When Jin-Xuan tea leaves are lightly roasted during processing, they have a unique milk flavor which is called nai xiang or milk oolong.

Tai-Xing Jin Xuan has a pleasing, smooth flavor with a buttery aftertaste. There is a slight astringency apparent when first sipped, which mellows into a very nice, full sensation on the back of the tongue.

Brewing Notes

Here are some guidelines for brewing Tai Xing oolong tea. These are meant as a starting point only. Please adjust to suit your individual preferences.

  • Brewing vessel: 150cc (5 US fluid ounces)
  • 6 grams of tea leaves
  • Water temperature: 85 - 90 C (185 - 195 F)
  • Infusion durations: 30 seconds, 1 minute, 2 minutes, 3 minutes, and 4 minutes

The taste of the brewed tea is affected by the water quality, water temperature, amount of tea leaves, type of brewing vessel and the duration of each infusion.
