Shan Ling Xi oolong tea is from a mountain area in Nantou county of central Taiwan and is located at about 1,900 meters above sea level. This high elevation provides ideal growing conditions for oolong tea as the air remains cool year round. Tea plantations have been established in Shan Ling Xi since the 1970's. It has since become known as one of the premier tea producing regions of Taiwan and Shan Ling Xi oolong tea is prized by Taiwanese tea connoisseurs.

Shan Ling Xi oolong tea can be brewed slightly longer than the Wu Ling oolong tea. Fifty seconds is recommended for the first pot when brewing this tea gong fu style. When brewing Shan Ling Xi oolong tea you will notice the sweet aroma which gives just a hint of the wonderful flavors to come.

Brewing Notes

Here are some guidelines for brewing Shan Ling Xi oolong tea. These are meant as a starting point only. Please adjust to suit your individual preferences.

  • Brewing vessel: 150cc (5 US fluid ounces)
  • 6 grams of tea leaves
  • Water temperature: 85 C (185 F)
  • Infusion durations: 30 seconds, 45 seconds, 1 minute 15 seconds, 2 minutes, and 3 minutes

The taste of the brewed tea is affected by the water quality, water temperature, amount of tea leaves, type of brewing vessel and the duration of each infusion.

Shan Ling Xi oolong has an exquisitely smooth taste with just a hint of flowers. The slight astringency to this oolong tea provides a refreshing cleansing effect to the palate, so this tea is ideal after a heavy meal. The smoothness of Shan Ling Xi tea has a buttery quality to it, and later brewings bring out a unique smokiness that settles on the tongue with a very pleasing sensation.
