Grown Without Pesticides

Winter 2015

Wu Ling oolong tea (wu-long tea) is our best tea in our regular collection. Wu Ling is a mountain area in Taichung county and its high altitude (more than 1800 meters) contributes to the ideal growing conditions for wu long tea.

Another reason why Wu Ling wu long tea is of such fine quality is the soil of the Wu Ling area. Wu Ling was a fruit producing region for many years until economic conditions favored imported fruit over home-grown apples and pears. Former orchards in the Wu Ling area were converted into oolong tea plantations, and Wu Ling wu long tea is renowned for its fruity quality.

Wu Ling is located on Mount Li (Li Shan or Pear Mountain) and wu long tea from Mount Li is the most prized wu long tea in Taiwan. It is ideally suited for gong fu style brewing and can be re-brewed up to eight times while still retaining plenty of flavor.

More information about the Li Shan area of Taiwan (including a section on Wu Ling wu long tea) can be found on this website about Wu Ling farm.

This is my second sample from Tea From Taiwan and I must say that so far I am impressed with the quality. I did prefer the first sample I tried but this was still very nice and I am glad I had the opportunity to try it. In a nut shell this Oolong is green and tastes like flowers but with a sweet and grassy edge that get stronger during it's peak steeps.

This oolong is of the green variety. No oxidized taste at all. It brews to a very mild flavor with body and a slight floral scent and after taste. I have been drinking this tea for over a year and it is my favorite. I still drink green tea but this tea is unobtrusive and delightful. I brew it for 3 minutes for the first two infusions and 5 minutes for subsequent infusions. I have gotten up to 5 infusions with flavor and body before the tea leaves are spent. It is almost impossible to over brew this tea into a bitter concoction. It is very forgiving of a lapsed memory. Since this is a green oolong, 195 degF water is preferred and a ten second rinse prior to the first infusion is recommended. This tea is guaranteed to please. Oh, and do take of whiff of the bag upon opening. You will be greeted by one of natures most perfect olfactory experiences.

After unpacking this Wu Ling and letting it rest in a canister for about 2 weeks, I finally have a good feel for this oolong. I like to brew 5g in a 150mL gaiwan @ 190-195F water temp. Initially, I steep it for 2:20, then I drop down to 2:00, add 30 seconds for the third steeping @ 2:30, then 3, 3:30, and so on. I realize this is pushing the steep time past true gong fu methods, but I like to find a balance between steeping styles that can really bring out the floral, creamy, and sometimes fruit-like aspects to the fullest before a more vegetal signature arises. This Wu Ling is quite balanced between an innate creaminess that is often associated with Li Shan oolongs and an almost juicy, fruit-like, undertone that persists into the 6th steeping. For me, it is not overly floral -- but very balanced between creamy and sweet with almost zero astringency. It has a laid back energy, or cha qi, when compared to other oolongs that can be more energetic. This is a great Li Shan oolong at an eve

This tea is very good. One has to be careful in measuring. My standard was too large and tea became bitter with nor much flavor. Got it right now with 1 teaspoonful for 120 ml pot and 6 infusions.

After trying all the teas from the Chong Pei sample pack and a sample of Da Yu Ling, I can say without reservation, the Wu Ling is by far my favorite. Do not be mislead by its lower price, this is a superb tea. The Wu Ling Oolong has a mild, yet complex flavor that is both relaxing and invigorating to drink. Its subtlety and freshness are balanced by the perfect level of astringency. Highly recommended.

Your Wu Ling is excellent tea. I have been a fan of high quality green oolongs for more than a decade. I have found from experience that there are great taste differences even among the best of these teas. I am glad I found your business on the web and look forward to placing additional orders as I consume my current supply.
